Beet Root Goat Cheese Salad

Hey darlings!!

Just a quick inspiration for a healthy lunch salad.

Cut beet root (I used pre-cooked one from the supermarket), fresh fennel and avocado into small pieces and mix it with crema de balsamico, balsamic vinegar, olive oil and salt. Toast a slice of bread or don't if you do not fancy carbs and add grilled goat cheese on top of the salad. Or you can skip the grilling and simply cut it into pieces. This way it is perfect to put into a container to take it to work or to a picnic.

If you want to upgrade the salad simply add a few drops of white truffle oil.
